The following recipe has been a favorite and much cheaper way of preparing burgers and works well with regular ground beef. While we typically use “American Ground Waygu Beef” from Costco, you can also use regular ground beef, typically around 80% or 90% Lean / 10% Fat. If you are a cheese person, I’ve found that either cheddar or pepperjack goes great with these.

The following recipe makes takes around 15-20 minutes on the smoker with about 30 minutes prep time.

Brioche Burger Buns

Everglades Heat (Or Equivalent)

Directions
- Preparation
- Place your Fresh Ground Waygu Beef in a mixing bowl
- Season your Waygu to your level of taste
- Smoking Instructions
- Pre-heat your smoker to ~ 225° F; Smoke Level 3)
- Smoke your burgers, until an internal temperature of ~ 115° F
- Sear the burgers for ~ 1.5 – 2 minutes, with the top down first
- Next, flip the burgers over and place your cheese on top and sear for another ~ 1-1.5 minutes until the cheese has melted.
- Typically, I let them rest for a few minutes while I prepare the brioche buns
- To prepare the buns, we prefer that they’re buttered and placed in a frying pan (much like a grilled cheese), so they’re crispy and have a buttery finish.
